Hello.
I got quite thick hair and when I gel it, I have problems because I try
to make straight spikes and instead I usually have thick and/or curly
spikes.
Is there any specific way in which I should get my haircut next time I
go to help this problem? I basically want nice straight-ish spikes (and
not big thick ones) without all the hassle im getting right now.

this kinda difficult for me to explain, but if there is such a thing ask your barber/stylist to cut your hair using "layering scissors" or scissors with combs like thing on the blade. if done properly it will make hair lose some of it curls by cutting only some of them off. or you can ask them to reduce the volume of the hair. they will cut some hair off very short from the route while keeping other long.
