Here's a recipe for my basic fruit Cheesecake

Crust:
about 1/3 lb graham crackers
2 tbsp brown sugar
1/4 cup butter
many dashes of cinnamon
many dashes of nutmeg

Filling:
16 oz. cream cheese, generic is fine
3 eggs with the white stringy yolk-tails removed
1/3 cup orange juice
1/2 to 3/4 can of sweetened condensed milk

Topping:
peeled orange slices, sliced strawberries or canned mandarin orange

Crush graham crackers; mix with brown sugar, spices. Add to softened butter (soft but still thicker than sour cream). Mix with spoon until even. Press into bottom of 8-inch round nonstick pan, or 8x12 inch is probably okay too. refrigerate

In a blender, put in all ingredients IN THE ORDER THEY'RE LISTED (crucial). Blend until completely smooth. Pour into crust, bake for 40-50 minutes at 350° F until it springs up when gently pressed. Leave to cool for a few hours and decorate. Refrigerate for a few hours before serving.

Let's make this a cheesecake recipes thread

O this sounds nice... I need to come to your place and have some cake and tea.

I'm going to print out this recipe....o yeah does it have to be whole egg or can it just be egg white?

I have some egg yokes in the fridge from a recipe with only egg whites and I have no idea what to do with them. Any ideas?

I think you can get away with using only the egg yolks for this recipe. It would probably result in a denser cheesecake, which is a really nice variation of this recipe.
