is the 4oz pack the same amount of hair as a 4oz pack of human?  Basically my question is, do they weigh the same?

Well the wefts are 75" long, that's way longer than any human I've had! x

what length does elite thermofiber come in? does it come in more than one? i've already ordered mine, but i didn't see a "length" option.

It only comes in 18". You can read about the hair all the way on the left column on the website.
