My natural hair color is a medium ash blonde, pretty much a dead match for the L'Oreal 7 1/2 A or the Nice n' Easy 106.  I'm trying to go to a dark warm brown - but I've noticed, in looking at the various boxes, that no shades darker than light brown (if even that dark) even show what the color result would be for a natural color that light.

I did find one product out there - in the Garnier 100% Color line (shade 433), that does show going from any shade of blonde as an option; but for some reason I'm hesitant to use it.

Should I take the plunge so to speak?  Or is there something better out there?

It's because they don't recommend going more than 3 shades away from your natural color (or the results might not be predictable). So they don't even put the expected results on the box.

Definitely try to find a Sally Beauty supply store. Their hair color is so much better than the ones in drug stores or Walmart.

No matter where you go, I'd try a light brown before a dark brown. Then if it's too light, you can always go darker. Dark Brown tends to show up as nearly black on lighter hair. I'd also recommend trying a demi perm color first (Natural instincts in the regular stores).

Demis work very well for darkening, and if you hate it, eventually it will fade.

I was medium blonde trying to go darker and "light brown" came out VERY dark brown on me.
