First, I apply vaseline to my entire hairline around my face, to my neck, the front and back of my ears, and anywhere else that I may get stained.
I start by making a part down the center/top of my head, and apply there first. then, using the applicator tip or the pointy end of a professional coloring brush, I proceed down the side of my head, parting small sections of about 1 inch at a time. I apply the color to the back of the section I just did, as well as the front of the new section I've just uncovered, to make sure that I get good saturation.
When doing the hair behind my ears, which is where the majority of my grey is, I push my ear forward with one hand while applying color to those sections--that's one place I want to make sure I get good.
Kurenko is right, doing the back is very hard. I start from the nape of my neck and work my way upwards. I don't always get it all, but I don't have much grey there, and the color I use is close to my natural color so you can't really tell. But if my roots were very different from my perm. color, I'd definitely ask a friend for help.
Good luck, and if you still need help, why not have your colorist do it once, and watch carefully, asking questions and for tips as she goes along. Tell her you're there to learn.

I just kind of move the applicator in neat little lines, and as long as I don't rush it, that seems to work out pretty well. You've got to be careful at the back, though, because you can't really see what you're doing, so it's easy to miss spots. If you can set up mirrors so you can look into one while the back of your head is reflected in the other, that might help, or ask someone you trust to do it for you.
