I sometimes leave a conditioner overnight and my hair is like butter. But I make sure it is a moisturizing conditioner. My hair doesn't need a protein based conditioner that much anyways.

You put a conditioner on OVERNIGHT? If it had either a lot of protein or silicone in it, that could also be a culprit.
I typically don't have a problem with shampoos, but I have to be careful of what CONDITIONERS I use.

I think it was the shampoo with the sodium sulfate in it. It can sometimes rob the hair of moisture. Thats why its good to follow up with a moisturizing shampoo or deep hydrating conditioner. HTH
I used a shapoo with sodium laureTH sulfate in it and its suppose to be smoothing intense ...could it be because i was in a rush and blow dried it on low and then flat ironed it?
well today i washed and condioned and it came out fine...maybe it was b/c the night before i heated some conditoner up and put it on my hair over night....?

You may have stripped it dry with your shampoo if you used the wrong one.
OR...If you used a high silicone conditioner along with a high protein conditioner, that could do it REALLY BAD. I made that mistake one time.
If you MUST clarify, I would suggest putting some of your regular moisturizing shampoo in a bowl and mix it with some apple cider vinegar and a little water. It's runny and watery, but nothing clarifies my hair better...and my hair is soft afterwards.
My hair HATES CO washes.

Sounds like it needs more moisture. If it happened just after a wash and you used shampoo then it could have stripped it dry. I had the same problem which I eliminated after doing co washes and only clarifying with non sulfate products.
