I've been in similar situations; one I can remember distinctly is at the dentist. Same deal. What I do is make the base of my ponytail/braid lower on the back of my head (closer to the nape). As it I wear it now, I can lean the back of my head against any such chair, and feel absolutely no discomfort.
I usually don't have to worry about my hair getting the way or think about what to do with it. But I had a test at the hospital where I had to lie down on a table for an extended period for a series of xrays (IVP) . I had to put my head back on pillow, but my hair was tied in a ponytail.
One of the few times I had to even think about what to do with my hair.
