I'm a hair-styling late bloomer.  No one ever taught me the right way to use product and just touching a hair dryer makes my hair frizzy and pouffy.  So I just never did anything but wash and air dry and rely on pins and clips to style my hair.  Upside: my hair's really healthy.  But my slippery hair lies flat to my skull and I'd love to have a bit of volume (not 80's metal hair, just a bit of lift).  How does this happen?!

Is it back-combing, hairspray, genetics, professional stylists, photoshopped?

Yes, back-brushing builds hair volume.

- lift sections of dry hair;

- gently brush the underside of the hair section toward your scalp;

- to keep that style, finish with volumizing hair spray.

Yes, backcombing can be damaging to your hair if you do it often enough.
Maybe you need to take a step backwards and reexamine what you are using to shampoo/condition your hair. It almost sounds like your routine is weighing your hair down from the beginning. Also, maybe you could use a volumnizing gel or mousse after washing to help lift your hair at the roots. If blowdrying poofs your hair, maybe you are drying it too dry. Try just getting the hair to a damp state, and then you can spray with a setting spray or gel. That will hopefully keep the lift you desire.

Another dumb question: how do I get the gel/mousse just where I need it (at the base?)  Or do I put it in all of my hair?  And would i still need to backcomb with that stuff?

Just apply it to your hand and rub your hands together to evenly dispense it to both hands. Then with your finger tips start at the forhead section and like massaging your scalp, work back to your crown and then downward to the neck area.
