Blonde hair help

I am a male that use to have blonde hair. My hair use to be white. When I got around 10 my hair started to get darker. When I became a teenager I started to get a flattop all the time. With my hair being shorter and me staying out in the sun my hair would almost completely turn back white. For years now I have just shaved my hair and it would always be dark. Now I have let it grown out and want my hair back white blonde.

Did some looking around and got some John Frieda SheerBlonde, but I got the wrong kind by mistake. I got the one for darker blondes but I choose to go ahead and use it. Well I am amazed it actually did lighten my hair. Cant wait to see what Platinum to Champagne will do to do my hair lol.
If the Platinum to Champagne does not work does anyone have any suggestions how to get my white hair back? I have looked up about using lemon juice and hydrogen peroxide etc.. how well does this stuff work? I even have thought about hair dye.

I love hair gel but with hair gel it gives my hair that wet look and it darkens it. I want a styling product that will hold my hair in place without making it look wet or darkening it, any suggestions? Btw I have simple hairstyle, I part my hair to the right.
