To get that second or third-day hair, sometimes I don't shampoo. Is it dangerous to use a straightener iron on hair like this even if it is not wet from water?

Actually, it's safer to use an iron on unwashed hair rather than freshly washed hair. Because the natural oils provide a small amount of protection.

You should not be using an straightening iron on WET HAIR. That can really damage your hair and cause your hair to split open from the water boiling with the heat within your hair.

It's easier, for me anyway, to do it on second or third day hair.

I had assumed that natural hair oil was just as bad as water since it has moisture to it. Thanks for clearing that up.
