A local hair extensions/braider uses the french plate method to weave wefts onto, does anyone know what it is? and whether its a good method?

That's the British name for a 'French Braid' which is an inverted cornrow braid.

Yep, that's exactly what it is an inverted cornrow braid. Instead of braiding under, you braid over the middle strands.
