Lean muffins
 
 
these muffins contain lots of tryptophan which supports serotonin synthesis in the brain which helps you get the message that your full. Give them a try i swear by them and yummy!
 
2 ounces of bran flakes
1/4 cup walnut
1/4 cup dried cherries or raisins
2 tablespoons of evening primrose seeds, ground
1 cup flour
2/3 cup rolled oats
1/2 cup cornmeal
1/2 cup sugar or sugar subsititue
1 teaspoon cinnamon or pumpkin pie spice or apple spice
2 teaspoons baking powder
3/4 teaspoons baking soda
1/2 cup sea salt
1 apple or pear chopped
1 cup low fat buttermilk
1 large egg
3 tablespoons cold pressed seasame oil
 
preheat oven to 475 place th rack in center of oven
use a 12 cup muffin pan with paper cups ( do not use non stick pan without paper liners)-drastic mistake there lol
With your hands crush the bran flakes into uniform small pieces but not crumbs, in a small bowl mix the bran flakes with the walnuts raisins or cherries and evening primrose seeds set aside.
in a large bowl stir together the flour oats cornmeal sugar baking powder cinnamon or pie spice if using that, baking soda, and salt. Add the bran flake mixture and stir.
Place the apple or pear,buttermilk, egg, and oil in food processor or blender and puree it. Fold the fruit mixture into the flour mixture stirring gently to combine.
Fill the muffin cups to the top Place the pan in the center of the oven on 375 degrees. Bake for 20 to 25 minutes.
Let cool in pan for few minutes then remove muffins serve or save in air tight container.
Makes 12 muffins.

you eat it and it helps you feel full  just because something has a little sugar or buttermilk etc does not mean you bash it and say is it diet food, IT WORKS ive used it and many others. I got this receipe a long time ago
from a dietician!
