I have been trying to get my desired shade of black, but have thus far been unsuccessful.
 
I use demi-permanent color from Sally's. 
 
I'm trying achieve a Charcoal black.  With no blue, purple, or red undertones. 
I have tried just plain "black" but it comes out blue-black.
 
 
Any suggestions?

Hmmm....I'm not very experienced with black. Maybe the further explanation of the color wheel on the bottom if this page may help you counteract the 'blue-black'.

black color always has a blue tone. use a level 2 dark neutral brown with 10 vol developer
