I'm a guy with (soon to be) medium to long length hair. I'm not sure of the type (e.g. thick) but my hair used to be pin-straight as a kid but a few years ago it turned slightly wavy, and the back curls when it gets long and down my neck.
 
Anyway, i've always used hair products primarily because if I just shower and shampoo my hair frizzes out. How do i get it to stay down? I don't know if this is because of length but I always see girls with their hair always shiny and smooth but mine always gets dry and frizzy and poofy (not curly).
 
I've tried leaving conditioner in my hair and that works for a little while, but as soon as something touches my hair like if I run my fingers through it, everything comes out and it frizzes out again.
 
I'd like to be able to not use any products and run my fingers through my hair and have it stay weighted and "shiny" (for lack of a better word -- it's not the shine i'm looking for per se, more the texture).

Probably try products,that''s why girls hair always seems shiney and flat.
You could try mousse if you want texture,or gel. If you want smoothness and shine you could try something like Frizz ease by John frieda or tigi bed-head after-party.
try to keep in mind that girls also use flatirons and blowdryers which adds to the shininess you're seeing. It takes alot of work! So dont feel like your hair is bad and needs help.

This is just something a curly-haired person has to learn to deal with.  I almost never run my fingers through my hair. (and yes, that drives me crazy because I love to play with it!)  The more you touch it, the more it will frizz and fluff because running your fingers through it separates the hair strands. 
 
Like Jul said, you'll probably need to flat iron or blow dry and use products to achieve the smooth shiny look like in the pic.
