Well I don't know about the salon you go to, but being a native Angeleno I can tell you that it is certainly not true that no one believes in roller setting on the west coast.. I get rollersets regularly, and no one has ever had a problem doing it..
I would say that you need to look around for a different stylist.. IF the person you're seeing cannot/will not do the service you want, then you need to speak up and refuse services you do not want..
I'll give you an example.. I learned the hard way that I cannot highlightn my hair without suffering severe breakage.. As a result my stylists KNOW that I will not allow them to do coloring services other than depositing color to cover my grey hairs.. No highlights or anything else.. Last year I went to a new stylist who INSISTED (despite my protests) that HE could highlight my hair and that I would not experience breakage.. I told him very politely but FIRMLY that I would add tracks or extensions strands if I ever wanted highlights from now on.. I will not EVER highlight my hair again.. When he persisted, I just simply told him NO and asked him to drop it.. and that was that..
I'm a big believer that it's my money and time and that I will not pay for services I don't want.. You need to do the same with the next stylist you deal with, or you can talk to the stylist you've been using and express your frustration and see if she is willing to rectify the situation..
