My best friend, bless her heart, let me cut her hair today. She`s not really that brave, however, as she has long, long hair halfway down her back. About a year ago she permed it (why?!?!?!?) so from the ears down it`s frizzy and somewhat wavy, with the rest being perfectly straight.
Next weekend she is going to get the fried part (at least a foot) cut off and go with a shorter bedhead style. I think it will be a good thing for her. Knowing that I secretly wish to drop my day job in public relations and become a master cosmetologist (:-p) she let me take a couple inches off the bottom since what the heck--even if I`d cut it diagonally with a paring knife it`s all coming off when she goes to the salon.
And it didn`t turn out badly at all. I cut it wet, a straight across the back cut, no V or U shape. Too bad my handiwork will be all gone next weekend! :-)

First let me say way to go on doing a good job.
Second if you really want to practise you can get a manikin head at Sally or other beauty supply stores. They might not be out in the open but they should have them.
You never know when a skill like being able to trim hair will come in handy. Just having a friend or relative stop by someday and being able to give them a trim or cut. Keep in mind that you don`t have to charge them for it, they`ll probably tip you anyway.
The first trim I did was a friend who came over. I did the job for free and she gave me a $15 tip.
Anyway, you sound serious so if you are I know it sounds funny but get a manikin head. They run about $30 - 40 depending on if they come with the clamp stand or not. Don`t forget to check if they come with the stand.

Thanks for the advice Robert. I really do like cutting hair, although I`d be afraid to do much more than a straight-across trim since I have zero experience. It`s like my good friend from my reporter days who, although she is a very talented photographer/photojournalist refuses to shoot weddings. If they turned out wrong or just weren`t what the couple wanted she would feel terrible. So she just doesn`t do weddings. I feel the same way about hair cutting.....but it sure is fun when it absolutely doesn`t matter as in my friend`s case! :-)
