My hair was grown out a couple of inches and I had it colored with some highlights.  The lady said to be sure to tell whoever does my hair next that it was  "double processed".  What does that mean and is it OK for me to just color my hair myself.

It means your hair was bleached / lightened, then either toned or dyed over (probably toned).  If you color your hair yourself, you may run into trouble with the base color showing through, and also your dye washing out very quickly (in a week or two, even if you use permanent).  The base color showing through can give you funny colors (green, pink, etc), but if you use a protein filler first, or just let a pro do it, you should be fine.
