Is it safe to use coconut oil on hair the night before getting hair stripped and coloured? Will putting coconut oil in the hair prevent the colour from taking so to speak?

Yes, it might be too much and the oil might block proper absorption. You could certainly use the oil on your ends if you are not planning on coloring there. A little bit of natural oil like sebum can be beneficial in helping the hair color "cling" to the strands but too much can actual act as a barrier. So you are right to be concerned.
