Hey those of you that use coconut milk, how do you keep it fresh? I opened some milk and put it in a plastic container but it only lasted like a week. I was thinking about freezing it...what do you guys think?

When I use Coconut Milk I use all of it within a week's time, so spoiling really isnt an issue. Freezing it doesnt sound like a bad idea though.

I use mine straight out of the can.  It only keeps for a few days.  Freezing it probably would work though, never thought of that.

Coconut has a short shelf life.  I never thought about freezing it though.  I think it might work.  I remember some recipe (from an actual cooking show), where the cook actually froze the coconut milk for later use.
